Below, Paul takes us through what makes the cut of Sirloin Steak so speical, as well as the perfect way to cook this succulent piece of meat. 

The Sirloin is a cut from the short loin, located behind the ribs of the steer, the short loin is bithis muscle is not heavily exercised by the cow and is mouth wateringly tender. The Sirloin Steak is also marbled with flavoursome fat. The best way to cook the steak would be to grill broil or pan-sear. 

Always cover and rest red meat after cooking, to retain the juices. Resting time varies depending on the meat size - meat will keep cooking once you’ve taken it off the heat, so be careful not to over-cook!
