Meet Paul from Tender Gourmet

Tell us a bit about your business?  
Tender Gourmet was established in 2000 in Hornsby and has slowly grown to be one of Sydney’s premiere meat retailers. Since 2000 we have won many accolades at Local, State and International levels. We pride ourselves in quality service which leads to good value for money and a great customer experience.

What is your position and how big is your team?
My name is Paul Brady and I'm the Director of our Macquarie Store. Coming from a family of butchers and being the third generation, my first job was while I was still at primary school as a wash-up boy and undertaking general duties at my uncle's butcher shop in Ireland. Our Macquarie store has a staff of full-time and part-time employee base of 10-12 staff.

What is the best part about your job?
The best part of my job is most definitely creating and refining new products that are cutting edge and in customer demand and trend.

What makes Macquarie Centre a part of the community?
Macquarie Centre is part of the community because it is a one-stop shopping centre that has all the essentials for the modern-day shopper. 

What is the most unusual/funny request you have had from a customer?
During my time at Macquarie Centre, the funniest request I have received over the counter would have been when I was asked if we stocked any snake meat!
What do you like to do in your spare time?
I'm a family man. In my spare time I love taking my family to their sport or Rugby League Games. Go Manly.
What is the most popular item in your store right now?
Sausages would have to be the backbone of our business. We have won two world titles at the most recent World Butchers Challenge awards for best sausages in the world. This has made us the go-to Butcher shop in Sydney.

What is your favourite season and why?
I must admit, I love summer. I just love barbecuing and selling barbeque cuts to loyal customers for them to enjoy during the warmer months.

What are easy meals that customers purchase from your store for their families?
We are a one-stop meal solution store with an array of fresh cuts, roasts, sausages and ready to eat meals. 
How has your business adapted throughout COVID-19?
Before lockdown we simply had a standard website, but we soon swung into action and integrated an online click and collect and delivery service. This helped us to provide our products to customers in these challenging times. It has also given us greater presence as a fresh food retailer online. 
How are you supporting your customers to ensure physical distancing and hygiene measures are adhered to instore?
We are able to physically distance easily due to our counter being 1.5m deep, and also having sanitiser readily available along with floor markings to remind customers to physically distance. 
How have you supported the community throughout this period?
We are constantly working with the local community and giving to local charities. We work closely with local schools and businesses and we love being a part of the Macquarie Centre community.
